MissLexyBakes: Ghirardelli Cookies

For my first MissLexyBakes post, I wanted to make a quick and easy cookie recipe that took me 15 minutes to make.



Ingredients:
- Cookie mix and required ingredients
- Something to grease the pan with
- Your choice of Chocolate to top it

Directions:

Step 1: Prepare your cookie dough

- Typically I like to make my own cookie dough from scratch. I have a sugar cookie recipe I almost always use. But today, I wanted to make it simple and quick since I was entertaining so I opted to use some cookie dough mix that I had in my cabinet. If you have the extra time, making your own dough from scratch makes all the difference.

Step 2: Prep for the cookies

- This is the time I like to begin to have everything set in place for the cookie making. This means preheating the oven to 325 degrees, greasing the cookie sheet, opening the chocolates and flouring my hands.

Step 3: Shape the cookies

- For this step, its all about the shaping of the cookies. I was in a bit of a rush, so my shaping wasn't as nice as it typically would be. All I did was pick up some dough, about the size of a small bouncy ball, and roll it up. Then I flattened it down in the palm of my floured hands then placed them on my cookie sheet. After, I placed a square of chocolate on top. I chose to use mini Ghirardelli chocolate squares, but the type of chocolate is totally up to you. I recommend dark chocolate to avoid it being too sweet. I had these laying around from my stocking and the size was perfect for the size of the cookies.

Step 4: Bake

- Once all the cookies are baked and the chocolate placed, place them in your preheated oven for 10-15 minutes. I checked mine every 7 minutes to insure they were cooking fine.

Step 5: Enjoy

- Once the cookies are cooled, enjoy! I love eating them while warm and the chocolate is still a little gooey. I sometimes microwave them for a few seconds to get the same effect later on.
